The Huehuetenango coffee region emerges as a treasure in the world of specialty coffee. Nestled among towering mountains and verdant valleys, it offers an ideal microclimate for cultivating high quality Arabica coffee. With elevations between 1,200 and 1,900 meters above sea level, along with a distinct dry season and cool nights, the region imparts some amazing flavor to its coffee. Huehuetenango's remote location and rugged terrain have preserved traditional farming methods, with coffee farms utilizing manual harvesting employing local labour who hand pick ripe cherries. Within 12 hours from harvest the cherries are de-pulped and washed. The beans are then dried on raised decks to reach ~11% humidity in the parchment coffee. Dried beans are quality checked and shipped into Guatemala City to a milling facility where the beans are hulled to remove the parchment and further sorted before bagging for export.
